I spent my Easter Sunday with my mum making this delicious cloud cake that we haven’t made since I was a child! It was such a lovely way to spend time with her and get some baking tips (mainly on whisking egg whites!). We didn’t go too off piste overall and kept the decoration simple with the chocolate whipped cream and mini eggs, and a light sprinkling of cocoa to finish it off. The cream was a slight trial and error as I’ve never done it before and over whisked on the first round but it was perfect after the second try. A true family effort has gone into this, later enlisting my brother for help with the photo (& the cleanup)! My dad also played a part, mainly in licking the bowl and eating the cake… Thanks Nigella for creating such a timeless classic recipe, it’s a firm family favourite for us and has many happy memories attached!
