Very very easy to follow nigellas recipe, but must admit I swapped the self raising flour for gluten-free as my hungry husband is gluten-free. The sponges turned out really well and I covered the base in strawberry jam and whipped up double cream and added a few strawberries on top for some flair , The taste was gorgeous and light and fluffy , Fit for an quintessential English afternoon tea..
