I've been baking Nigella's for years now it's so easy to to follow, especially if you are a newcomer to baking. It's light and fluffy, every time the bake is beautifully, you will not have any problems turn out the the sponge. I always use fresh cream, perfect for those summer days. Tip: This sponge freezes perfectly, so you can make ahead of time, take out on the day and whilst still frozen I use seedless raspberry jam and top with whipped double cream. Finished with icing sugar, then placed in the fridge for to be served later in the day. Slices beautifully. Enjoy
