First time making a Victoria sponge so was very pleased with the result. I used a friend’s homemade raspberry jam for the middle of the cake, along with defrosted frozen raspberries, which worked well and cream. For the top I used icing sugar and decorated with fresh raspberries. Was enjoyed outside in the sunshine! A great recipe, will definitely be making again.
