First time making a filled sponge, and really enjoyed it! Love the regal appearance of this cake and carried the strawberries to the center with a few blueberries for contrast (was going to include blackberries too but it got cut up and eaten in the mean time! I had chocolate sauce from cupcakes and thought to drizzle this on top and then I used sifted agave to pull back on the sugar a bit. I will be fully experimental making this cake for my sons birthday on 4th July and will make it in a pirate ship mould tin, cut it and and do blue cream and blackberries in centre and base and then hmmm not too sure about the top... but def a pirate flag! Thank you for this opportunity and I hope I am not committing sacrilege on your beautiful Victoria sponge - :(
