It was my birthday the other day, so I made myself a cake! Not just any cake, but Nigella’s glorious Victoria Sponge, perfect for a June Birthday Queen! Twin butter-rich sponges (because I’m a Gemini) sandwich whipped Chantilly cream and sieved raspberry jam mixed with crushed fresh raspberries. Like Nigella, I adore the tartness of raspberries here to balance the richness of the sweetened vanilla cream. Nigella’s quick and easy processor batter includes cornflour and creates cakes with the finest crumb of any cake I’ve ever made! A very Happy Birthday to all my fellow Geminis!
