This ermine frosting was such a delightful discovery and a real challenge. It was my first time making this icing and attempting to neatly coat a cake. While there’s definitely room for improvement, I’m proud of how it turned out. The white, creamy finish resembles a snowy winter landscape – perfect for this time of year. This cake will take centre stage at our New Year’s Eve celebration, ready to be enjoyed with friends and family.
