This month’s cake for our December Cookalong has a snow-covered effect — it is Nigella’s Vanilla Layer Cake with Ermine Icing. This majestic cake has sponge layered with and covered by an ermine (or Flour Buttercream) icing. This unusual icing is created by first making a paste with flour, sugar and milk. You will need to make this well in advance of your actual icing as it needs to be cold to make the buttercream. You can decorate your iced cake especially for Christmas and go freestyle with your own design, or leave your Vanilla Layer Cake with a cool, calm snowy scene!
