
Just the two of us, so I don’t tend to bake unless we have visitors. However I was really keen to try out this cake! To avoid too much temptation, I did half the quantity, cooked it in 1 sandwich tin and then halved the finished cake! (A trick suggested by a FB friend!) I switched things up slightly by using cold espresso coffee, and substituting this for the espresso granules in both the cake and buttercream. Will definitely be baking this again! Might well add some chunks of walnuts next time too, for extra texture!
