A steamed syrup sponge is one of my favourite things to eat, and I must say that it seems to me a terrible shortcoming that my recipe for it has never been on the website. I am very pleased to right this wrong now!
There is no suet involved in this recipe: it is, instead, a buttery sponge, that steams in a lidded pudding basin for 2 hours over a pond of lemony golden syrup, which, once the sponge is unmoulded (on a lipped plate to catch any drips), makes a gleaming sauce. It is the most comforting pudding I know, and just what is called for right now.
