Butterscotch Fruit Fondue

Introduction

If ever you've bought fruit in the spirit of hope, only to discover, when you get home, that though it may be brightly hued it is disappointingly dimly flavoured, this is the uplifting solution. Anything, frankly, dunked into butterscotch sauce tastes good, but even the crunchiest, sharpest strawberry comes alive when dipped into its buttery sweetness.

For US cup measures, use the toggle at the top of the ingredients list.

Ingredients

Serves: 2

Metric Cups
  • 45 grams light brown muscovado sugar
  • 2 tablespoons granulated sugar
  • 150 grams golden syrup
  • 30 grams butter
  • 125 millilitres double cream
  • a splash of vanilla extract

TO SERVE

  • strawberries
  • mangos
  • other cut fruit of your choice
  • 3 tablespoons light brown sugar
  • 2 tablespoons granulated sugar
  • ½ cup golden syrup or light corn syrup
  • 2 tablespoons butter
  • ½ cup heavy cream
  • a splash of vanilla extract

TO SERVE

  • strawberries
  • mangos
  • other cut fruit of your choice

Method

  1. Melt the sugars, syrup and butter in a saucepan and boil for 5 minutes.
  2. Add the cream and vanilla extract, stirring together, and then take off the heat.
  3. Divide the sauce between two cups or small bowls, and then arrange the fruit on two saucers or on a plate, as you see fit.
