Apples in Šlafor

Perhaps the most appropriate name for a weekend breakfast, these are apples in dressing gowns (šlafor or šlafrok being adaptations of the German word, schlafrock). It was a happy weekend indeed when my mother made these as a special treat. They would also work very well as a dessert with ice cream, but for me these are the perfect thing to eat on a weekend morning, still wearing your pyjamas and dressing gown.

Ingredients
Serves: 4
- 125 grams plain flour
- 1 medium egg
- 100 millilitres full fat milk
- 25 grams unsalted butter (melted and cooled)
- ½ teaspoon baking powder
- 1 teaspoon caster sugar
- ¼ teaspoon ground cinnamon (plus extra for dusting)
- ½ teaspoon vanilla bean paste
- 1 teaspoon lemon zest
- 1 teaspoon rum (optional)
- ⅛ teaspoon fine sea salt
- sunflower oil (for frying)
- 2 - 3 eating (dessert) apples peeled, cored and sliced in 1 cm (½ inch) thick rings
- icing sugar
- 1 cup all-purpose flour
- 1 medium egg
- scant ½ cup whole milk
- 1 ounce unsalted butter (melted and cooled)
- ½ teaspoon baking powder
- 1 teaspoon superfine sugar
- ¼ teaspoon ground cinnamon (plus extra for dusting)
- ½ teaspoon vanilla bean paste
- 1 teaspoon lemon zest
- 1 teaspoon rum (optional)
- ⅛ teaspoon fine sea salt
- vegetable oil (for frying)
- 2 - 3 eating (dessert) apples peeled, cored and sliced in 1 cm (½ inch) thick rings

Method

- First, prepare the batter. Mix together the flour, egg, milk, butter, baking powder, sugar, cinnamon, vanilla, lemon zest, rum (if using) and salt in a large bowl and beat with an electric whisk until well combined and smooth. Cover and set aside to rest for at least 30 minutes.
- Pour 2cm (¾ inch) oil into a medium frying pan. Heat over a medium-high heat until the oil reaches 175°C (350°F) or a little batter dropped into it sizzles immediately.
- Drop the apple slices into the batter and coat them well. Lift out four to six coated slices and place them in the pan, frying for 2–3 minutes on each side until they are slightly puffed up and golden brown. Lift them out with a slotted spoon and place them on a tray lined with paper towels to drain. Repeat with the remaining apple slices. Dust the apple fritters with icing sugar and a pinch of cinnamon. Serve warm.
