Introduction

Make a batch of 'home-made' cookies in a flash. Great for last-minute bake sale contributions.

Ingredients

Serves: About 4 dozen cookies

  • 1 batch cake mix (chocolate is good)
  • ⅓ cup vegetable oil
  • 2 eggs
  • superfine sugar

Method

  • Heat over to 350F. Mix cake mix (dry), oil and eggs in a large bowl with spoon until dough forms.
  • Shape dough into 1-inch balls, roll in sugar. Place about 2 inches apart on ungreased cookie sheet.
  • Bake 8 to 10 minutes or until set. Remove from cookie sheet to wire rack.
  • Additional Information

I have used many different cake mixes. My children especially like them with a bit of frosting and some sprinkles on top. Watch during the end of the baking time, and when the cookies crackle, then they are done. A nice soft, chewy cookie. Something easy for the kids to prepare.
