Preheat oven to 350 F. Stir together the cream and sugar. Stir in the nuts, orange peel, and the flour. On a cookie sheet lined with baking parchment or a Silpat, drop the batter onto it by the teaspoonful, spacing well apart as the batter spreads. Bake for 10-15 minutes, though watching carefully as these cookies burn easily! Let cool on the cookie sheet for about 10 minutes, then move to a cooking rack to cool completely. When cooled, spread one cookie with chocolate, and sandwich with another cookie.
melt together chocolate and cream over low heat in a double boiler. When both are thoroughly incorporated, let cool before spreading over cookies. The chocolate ganache is optional. These cookies stand well on their own, unadorned.
Introduction
Butter, thin, crisp cookies with toffee-ish properties. They are lacy and are delicious when spread with chocolate!

- ⅓ cup cream
- 3 tablespoons granulated sugar
- ⅓ cup sliced almonds (or chopped hazelnuts)
- ⅛ kilogram candied orange peel
- ¼ cup flour
For the Chocolate Ganache
- 4 ounces semi-sweet chocolate
- 1 tablespoon cream
