Aunt Betsy's Banana Bread

Rub flour into butter to resemble breadcrumbs and add other dry ingredients. Mix in mashed banana and egg and also a little milk. Put into greased loaf tin and bake in oven gas mark 3 for about 1 hour and 10 minutes. This is the inexact bit as depends on the type of oven and the moisture of the bananas etc. Should be golden brown and firm to touch and not too wet when you put a skewer in. Usually if bottom is dry and golden means it is okay a bit of trial an error also when it cools it cooks a bit more.

Serves: approx. 8-10
- 4 bananas (ripe and crushed)
- 8 ounces self-rising flour
- 4 ounces butter
- 3 ounces superfine sugar
- 4 ounces golden raisins
- 2 ounces candied cherries (optional)
- 1 egg
- milk

Additional Information
It can be frozen, and often tastes nicer after it has been defrosted as it gets a little stodgier. It also keeps for quite a long time if stored in a tin. Enjoy it. Yum!
