Moroccan Inspired Chicken

In a large pot... Fry onions and garlic till soft. Add spices and herbs. I always add a bit extra Paprika because it gives the sauce an incredible richness of colour and flavour. Sear chicken pieces till brown (I like to keep breasts whole). Add a glass of red wine to deglaze pot. Empty sachet of tomato soup and add water, enough to cover the chicken. Add in diced lemon preserve. Remember to rinse off excess salt from the lemons. Bring up to heat and simmer gently, with the lid on, for several hours or until the chicken falls off the bone. Taste and season Serve on a dollop of creamy mash potatoes and perhaps some flat leave parsley to finish

I was given a jar of lemon preserve as a Christmas gift and was thus inspired to create this recipe.

Serves: 6 - 8
- 1 large onion
- 6 cloves garlic
- 2 teaspoons paprika
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- 1 sprinkling of mixed herbs (a large sprinkling)
- 175 millilitres red wine (1 glass)
- tomato soup (1 sachet)
- 8 large chicken breasts
- water
- preserved lemons
- black pepper
