  • 1 olive oil
  • 1 large onion Cut into eighths
  • 2 medium apples Quartered and seeded
  • 2 cloves garlic Minced
  • 1 tablespoon thyme
  • salt to taste
  • pepper to taste
  • 1 apple juice or cider

Method

  • I usually prep this in the morning and let all the flavours blend together during the day, but it is just as good without sitting.
  • Place tenderloin in a baking dish, use just enough oil to lightly coat meat.
  • Rub garlic over meat, salt and pepper to taste, sprinkle thyme over meat as well, place onions and apples around meat, cover and refrigerate an hour to all day, whichever is easier for you.
  • Take tenderloin out of refrigerator while you pre-heat oven to 375 degrees.
  • Pour enough apple juice into pan so that it is about 1 inch deep and roast about an hour, or until done. *This is also good if you toss some sweet potatoes in the pan as well.
