Introduction

Traditional Thursday food, as dessert after split pea soup. Will remind Brits of Yorkshire pudding, but is usually dessert. A savoury version (I've never made it) is to fry lardons or small pieces of ham or bacon, then add to the (unsweetened, and no cardamom either) mix and bake as usual.

Ingredients

Serves: 4

Metric Cups
  • 1 litre milk
  • 500 millilitres flour
  • 4 eggs
  • 1 pinch of salt
  • 1 pinch of sugar
  • 1 teaspoon ground cardamom (about)
  • 1⅘ pints milk
  • 18 fluid ounces flour
  • 4 eggs

Method

  • Whisk together eggs, spices, flour, slowly adding milk to make a smooth batter.
  • Bake in the oven (225°C) for about 35 minutes. Use the deep baking tray from the oven lined with baking parchment, or a similar pan. Maybe a brownie pan... It works fine to halve the recipe for a smaller family.
  • Serve with jam and whipped cream, or maybe a bit of vanilla ice cream. Easy to use scissors to cut the pancake to suitable pieces. This is to be eaten Thursdays, with split pea soup. Tradition!
