Ingredients

Serves: 6-8

Metric Cups

For the Cake

  • 4 medium eggs
  • 250 millilitres sugar
  • 250 millilitres vegetable oil
  • 500 grams semolina
  • vanilla essence
  • 3 teaspoons baking powder
  • 250 millilitres brandy

For the for Syrup

  • 625 millilitres sugar
  • 500 millilitres water
  • 3 cinnamon sticks
  • 3 cloves

For the Cake

  • 4 medium eggs
  • 1 cup sugar
  • 1 cup vegetable oil
  • 18 ounces semolina
  • vanilla essence
  • 3 teaspoons baking powder
  • 1 cup brandy

For the for Syrup

  • 2½ cups sugar
  • 2 cups water
  • 3 cinnamon sticks
  • 3 cloves

Method

Cypriot Semolina Cake is a community recipe submitted by annauk and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Mix ingredients for cake, place in an oblong baking pan , place blanched almonds on top in rows (so there will be 1 on each piece) 180c for 45 - 60 mins
  • While cake is cooking place syrup ingredients in a pan and simmer for approx 10 mins.
  • When cake has cooled for 15 mins pour syrup over and let it absorb!! yum yum!

    • What will be the subsitute for brandy, as we are muslims we cant put any alcohol.
