Lentils With Rice and Caramelised Onion

Boil the lentils in water until almost cooked (they should still have a bite to them though) Make sure they have plenty of water in (they should be covered by about an inch) add the rice, which has been washed well (I rinse basmati at least 3 times) Simmer, until the rice is cooked, by which time, the water will have all been absorbed by the rice and the lentils will be completely cooked. Meanwhile fry the onion in the oil until lovely and dark and caramelised. Add the onion to the rice and lentils, stir well, add salt and pepper and serve.
Introduction
This is a Middle-Eastern dish, but also one that my Mom has made for years, it's very healthy and filling, but also delicious!

- 1 pinch of salt
- 1 pinch of pepper
- 3 teaspoons olive oil
