Ingredients

Metric Cups
  • 350 grams caster sugar
  • 6 egg whites
  • 120 grams butter (melted)
  • 100 grams ground hazelnuts
  • 150 grams cream crackers (crushed)
  • 3 tablespoons cocoa powder
  • 4 tablespoons drinking chocolate
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla essence
  • 12⅜ ounces superfine sugar
  • 6 egg whites
  • 4¼ ounces butter (melted)
  • 3½ ounces hazelnut meal
  • 5⅓ ounces cream crackers (crushed)
  • 3 tablespoons unsweetened cocoa
  • 4 tablespoons drinking chocolate
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla essence

Method

  • Sift together the baking powder and cocoa powder.
  • Beat together the egg whites and caster sugar to a meringue, and then fold in the dry ingredients.
  • When incorporated, finally fold in the melted butter and vanilla essence. Pour intoa spring-bottomed cake tin which is lined with oven paper and bake for about 35 minutes at 170'C.
  • When cold, place on a wire rack and cover with the prepared ganache. Leave to set before placing on a board or plate.
