I just threw this together for dinner last night and the family loved it! Thought others might too!

Ingredients

Serves: 4

Metric Cups
  • 500 grams chicken thighs (diced)
  • 1 large onion (diced)
  • 4 cloves garlic (crushed)
  • mushrooms (sliced)
  • 1 dash noilly prat (large slosh)
  • 1 tin evaporated milk (light)
  • cornflour
  • fresh parsley
  • 17⅔ ounces chicken thighs (diced)

Method

  • Brown onion in pot, adding garlic towards the end. Throw in chicken. Stir until chicken is brown-ish. Add the mushrooms and stir until mushrooms start to wilt.
  • Add the slog of Noilly Prat and let it bubble for a bit, just so you can stand there and enjoy the aroma! Then add the evaporated milk and let simmer for 10 minutes or so.
  • Thicken with a little cornflour and sprinkle with the parsley. Serve with rice, or unthickened with pasta. Absolutely delish and enjoyed by all the family!
