Chicken a La Fifi

Brown onion in pot, adding garlic towards the end. Throw in chicken. Stir until chicken is brown-ish. Add the mushrooms and stir until mushrooms start to wilt. Add the slog of Noilly Prat and let it bubble for a bit, just so you can stand there and enjoy the aroma! Then add the evaporated milk and let simmer for 10 minutes or so. Thicken with a little cornflour and sprinkle with the parsley. Serve with rice, or unthickened with pasta. Absolutely delish and enjoyed by all the family!
