Lowish Fat Clafouti

Preheat oven to 180ºC. Spray a 30cm flan dish or baking dish with non stick spray, or just brush with a little oil. Pit/core the fruit and chop into cubes or slices- whatever takes your fancy. Leave cherries whole- your choice to pit or not! Blend the milk, honey, eggs, vanilla and any juice from the fruit. Add the flour and continue to blend for a minute or so until completely smooth. This can be done in a blender, food processor, kitchen aid, handheld beaters, whisk or whatever! Either arrange the fruit in the dish, or add to the bowl- whatever you feel like doing! Pour everything into the pan and bake for around 45 minutes. It should be puffed and browned. Stick a knife in and it should come out clean. Remove from oven and serve either hot or warm. Yum!

OK! Don't turn up your nose because this is seriously good! It is adapted from an Ian Parmenter recipe. I use fruit in season or failing that tinned peach segments or whatever!

- 16 ounces fresh apricots (ripe or slightly overripe - or peaches, pears, cherries etc)
- 1¼ cups skimmed milk
- 4 tablespoons honey
- 3 eggs
- 1 tablespoon vanilla extract
- ½ cup sifted all-purpose flour
