Spaghetti With Smoked Salmon

Cook the spaghetti in lightly salted water with 1/2 tbsp olive oil, until tender, but with a bite. Drain the pasta, and toss with the remaining olive oil. Set aside, remembering to keep warm. Pour the cream into a small saucepan and bring to simmer. Pour the brandy into another small saucepan until simmering. Let neither pan boil!Remove both pans from heat and combine. Cut the smoked salmon into strips and add to the cream mixture. Season with cayenne and black pepper. Just before serving, stir in the chopped, fresh coriander. Transfer the spaghetti to a serving dish, pour the sauce over, tossing thoroughly. Scatter the crumbled feta on top and garnish with yet more coriander (you can substitute this with parsley if coriander does not appeal). Serve immediately.

Thought I should include this here, as it was the first meal I ever cooked for my husband. It is easy and slurpingly lovely! Just the kind of pasta you want to take to bed with you at 3AM!
