Method to be prepared twice, one per sandwich tin Prepare two sandwich tins Cream butter and sugar together untill pale in colour, light in texture and fluffy Beat in eggs, one at a time while adding self raising flour at the same time Transfer the mixture to the sandwich tins bake at 180o for 25- 30 mins until golden brown leave to cool Sandwich together with jam and butter icing dust cake with icing sugar

Lovely cake tastes better the next day once it's been in the fridge the flavours seem to come out. Made this cake twice now both times great. Although at first I didn't realise you had to double the ingredients shown as its written for one cake.
