Wacky Chocolate Cake

Pre-heat oven to 180 degrees centigrade/gas mark 4. Grease and line a 4"x6"x1.5" rectangular tin (e.g. a small roasting tin). Sieve together the dry ingredients. Make 2 small holes and 1 larger hole in the floury mixture, and into each of them measure the vanilla, vinegar and oil. Pour the water over the top of it all, and mix well together. Pour into lined tin (it will be quite runny) and place in oven. Cook for 30-40 minutes, or until a skewer poked into the middle comes out clean. Allow to cool slightly in tin, and then turn onto rack to cool completely.

- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 teaspoon vinegar
- 5 tablespoons vegetable oil
- 1 cup lukewarm water
- 1½ cups flour
- 3 tablespoons unsweetened cocoa
- 1 cup superfine sugar

Additional Information
I've used all sorts of tins and cooking times, and different "cup sized" measures - this cake is remarkably resilient to failure. The absence of egg and butter makes it (I suppose) vegan.
