Lemon Curd

Put butter, sugar and strained lemon juice into a bowl. Sit bowl over a pan of simmering water and cook till sugar is completely dissolved. Remove from heat and allow to cool a little. Add well-beaten eggs. Return to heat and cook, stirring constantly, till mixture coats the back of a wooden spoon. Pour into small jars, cover and cool.

I have always known this as Lemon Cheese, but I think Lemon Curd is the term most people use.
