  • 4 chicken breasts (or drumsticks if you prefer)
  • 2 tablespoons dark soy sauce
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon tomato ketchup

  • Mix all ingredients together and pour over chicken. Leave to marinade.
  • Bake in a preheated oven (180 deg C fan assisted) until done. I usually cover with foil until the last five minutes of cooking which gives a nice sauce in the baking dish to pour over the sliced chicken breasts.
