Lucuma Ice Cream Sundae

Introduction
Lucuma ice cream is a popular flavour of ice cream in Peru and perhaps Brazil also. It has a caramel/butterscotch taste. You could serve this with other flavours such a s strawberry and chocolate in a banana split. I also made a carob sauce to drizzle over and if you have pecans or broken brazil nuts to scatter that would be good too.

- 1 large frozen banana
- 1 cup almond milk
- 3 medium fresh dates
- 3 tablespoons lucuma powder
- 1 teaspoon vanilla extract
- 2 tablespoons carob powder
- 2 tablespoons coconut oil
- 1 tablespoon honey
- 1 tablespoon water

- 2 tablespoons coconut oil
- 1 tablespoon honey
- 1 tablespoon water
