Introduction

A simple, substantial lunch or supper salad with seared tuna and asparagus. All you need is some French bread and a glass of wine and you are transported to Parisian heaven.

Ingredients

Serves: 1

  • mixed salad leaves
  • fresh green asparagus
  • eggs (boiled)
  • tuna
  • tomatoes
  • potatoes (boiled)
  • capers (optional)
  • black olives
  • fresh flatleaf parsley
  • vinegarette

Method

  • Steam the asparagus and arrange on plate with the salad leaves and tomato and boiled potato.
  • Boil an egg and add to salad.
  • Sear the tuna in a hot pan with garlic.
  • Place tuna on salad plate, squeeze over some lemon juice, tear some parsley, drizzle dressing and dot with black olives.
