Simple Meatloaf

Finely chop the onion and garlic. Mix well with the minced meat. Stir in 2 tbsp tomato puree and use the whole egg to bind the mixture. Season with salt and pepper. Place in a loaf tin and bake in a med-hot oven for about an hour. Serve sliced according to appetite. I often like to add herbs or other flavouring to the basic recipe for variety.
Introduction
A great meal if you are in a hurry, or a midweek family meal. Adjust the quantities to suit your taste. Can be kept and served cold for lunch.
