Canadian Lumberjack Cake

Introduction

This cake is easy to make once you have your ingredients ALL ready to start. If you love cake then try this one and you will not regret it. Enjoy !!!

Ingredients

Serves: 16

  • 1 cup apples (peeled, chopped)
  • 7 ounces chopped dates
  • 1 teaspoon vanilla essence
  • 1 cup boiling water
  • 125 grindings butter
  • 1 cup superfine sugar
  • 1 egg
  • 1½ cups all-purpose flour
  • 1 pinch of salt
  • 2 ounces butter (extra)
  • ½ cup brown sugar
  • 2 ounces shredded coconut
  • ⅓ cup milk
  • 1 teaspoon baking soda

Method

  • Combine apples, dates, bicarb, and boiling water. Allow to cool until lukewarm.
  • Cream butter and sugar, add egg and vanilla essence, beat well.
  • Sift flour and salt, beat into creamed mixture alternately with cooked fruit mixture.
  • Pour mixture into greased and greased paper lined deep 20cm square tin.
  • Bake in a moderate oven for 1 hour 10 minutes. Combine extra butter, brown sugar, milk, and coconut in a small saucepan. When melted, spread over cooked, hot cake.
  • Bake a further 20 minutes.

    • A lovely moist cake with a crunchy caramel coconut topping dusted with icing sugar prior to serving... I added 3/4 cup of chopped walnuts to the batter after the flour was added to which I also included a half cup of self raising flour. Lumberjack Cake...Scrumdelicious!!!
