Lemon Butter Flan

Preheat oven to 180C brush a 20cm springform pan with butter and line the base with Baking paper. Sift flour into a bowl with sugar rub in the butter. I do all this in my processor. Make a well in the centre and add the egg. Press 2/3of the pastry into the tin. It is difficult so I put on a plastic glove and press it down with my hand, don’t be too fussy. Spread the lemon butter over and then crumble the remaining pastry over it, in little pieces. Bake 30 minutes or until golden. Cool in the tin. Enjoy!
