Preheat oven to 325. Combine cream cheese, sugar & juice @ medium speed until blended (food processor works too). Add eggs & vanilla then blend. Place wafer in bottom of paper lined muffin cup. If you have chosen a larger wafer just break it up a bit- push it in & poke it with your finger a few times. DO NOT crush or crumble it. Pour cream cheese filling over top of cookie, fill to 3/4 full. This will be messy unless you put the cream cheese mixture in a container with a pour spout or use a turkey baster. Bake at 325 for 15-20 min. Cool completely. Top with pie filling or preserves. Keep refrigerated. **Philly light cream cheese works & tastes the same as regular-some no name lights do not work.
