Savory dinner muffin.

Ingredients

Serves: 12

  • 2 cups flour
  • ¾ teaspoon salt
  • ¼ cup finely chopped fresh dill
  • 1 cup plain yogurt
  • 3 tablespoons melted butter
  • 1 tablespoon baking powder
  • 1 tablespoon superfine sugar
  • 1 egg
  • ½ cup milk
  • ½ cup grated Cheddar cheese

  • Preheat oven to 400.
  • Sift flour with salt, baking powder & sugar.
  • Stir in dill. Combine egg, yogurt, milk & melted butter. Gently stir liquid mixture into flour mixture until just blended. fold in grated cheese.
  • Using an ice cream scoop, fill buttered muffin tins 3/4 full.
  • Bake @400 for 20-25 min.
  • Makes 12-15 large muffins.
