Baingan Ka Bharta / Eggplant With Peas

Introduction

Traditional way of preparing eggplant in India. Spicy dish often made in summers. It is dish made with Eggplant and Green peas.

Ingredients

Serves: 3

  • 1 medium eggplant
  • 2 small chopped onions
  • 2 chopped tomatoes
  • 2 chopped green chiles
  • 1 salt (to taste)
  • 1 teaspoon red chile powder
  • 1 teaspoon chopped cilantro
  • 2 cups frozen peas (thawed or fresh green peas)

Method

  • Boil egg plant for 20 mins each side.
  • Remove the burnt skin and mash the eggplant and let it cool.
  • Add chopped onions in non stick pan with 3 tsp. of veg oil.
  • When onion turns golden brown in colour add tomatoes and green chiles.
  • When mixture starts leaving oil add salt and red chili powder
  • Add peas and mix it well and cook for 3-4 minutes. Now add eggplant and mix it well.
  • Let it cook for 10-15 minutes.
  • When it is ready serve with hot paraths or rotis and garnish with chopped cilantro.
  • Additional Information

    One eggplant serves around 2-3 persons.

    • I believe the first step should say broil eggplant. Not boil.
