Great and Amazing Brownies

Preheat oven to 180C/350F/Gas4. Line a 25cm square baking tin with greaseproof paper or just lightly butter it. In a large bowl over simmering water, melt the chocolate and butter and mix until it is nice and smooth. Add the cherries and nuts, if you're using and stir all together. In a separate bowl, mix together cocoa powder, flour, baking powder, sugar then add all this to the chocolate, cherry, nut mixture, mix all until you have silky consistency. Poor the mixture into the baking tray and put in oven for 20-25 minutes. You DON'T want to overcook them, unlike cakes you don't want a skewer to come out clean. The brownies should be slightly springy on the outside but still nice and gooey in the middle. Allow the brownies to cool in the tray, then CAREFULLY transfer them to a large chopping board and cut them into chunky squares.

- 250 millilitres creme fraiche (or double cream)

- 3 ounces unsweetened cocoa (sifted)
- 2 ounces all-purpose flour (sifted)

- 13 ounces superfine sugar

- 8⅘ fluid ounces creme fraiche (or double cream)
