Ingredients

Makes: One Christmas Turkey

Metric Cups
  • 1 turkey
  • 3 oranges
  • 3 lemons
  • 20 cloves garlic
  • 1 teaspoon cumin
  • 1 teaspoon chilli powder
  • 1 teaspoon cayenne pepper
  • 2 teaspoons black pepper
  • 250 millilitres cognac
  • 100 millilitres white wine
  • 4 laurel leaf
  • 4 tablespoons salt
  • 100 millilitres olive oil
  • 2 cinnamon sticks
  • 1 turkey
  • 3 oranges
  • 3 lemons
  • 20 cloves garlic
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon cayenne pepper
  • 2 teaspoons black pepper
  • 9 fluid ounces cognac
  • 4 fluid ounces white wine
  • 4 laurel leaf
  • 4 tablespoons salt
  • 4 fluid ounces olive oil
  • 2 cinnamon sticks

Method

Christmas Turkey is a community recipe submitted by christmasdreamer and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

Day 1

  • Buy a turkey in the butcher's weighing 5 or 6 kilograms
  • Clean it of any feathers that it may have
  • Plunge entirely the turkey in a big bowl with 2 oranges and 2 lemons slices, cloves of garlic crushed, black pepper powder and laurel leaves
  • Let the turkey be in this marinade about 24 hours

    Day 2

  • Scrub the turkey with the salt
  • In a small bowl make a paste with: 15 big garlic cloves crushed (in the kitchen grinder), olive oil, black pepper powder, chilli powder, Cayenne pepper powder, cumins powder, white wine, salt (a little bit more). RESERVE THE PASTE
  • With a Syringe inject all the turkey flesh with cognac
  • Scrub the turkey with the paste (reserve a little bit to use during the baking) and wrap it in plastic film
  • Let the turkey be like this 24 hours

    Day 3

  • Turn on the oven at 180º
  • Take off the plastic film of the turkey and put the turkey on a tray
  • Plunge a orange and a lemon, spiked on a fork, in boiling water about 30 SECONDS
  • Introduce the orange and the lemon parboiled inside the turkey and two cinnamon sticks
  • Put the turkey in the oven and cook it slowly
  • Sprinkle the turkey several times during the baking with its own sauce and swab it with the reserved paste.
