Introduction

This fiery tea is amazing for when you're sick. It's also good for when you're not sick. This tea is good to drink hot or iced. I got it from a pacific islander friend of mine whose mother made it for him this way for as long as he could remember.

Ingredients

Serves: 8-10

Metric Cups
  • 1 pound ginger root washed and peeled
  • water (to fill a large pot)
  • ½ kilogram ginger root washed and peeled
  • water (to fill a large pot)

Method

  • Chop the ginger coarsely and fill a pot with water. A stock pot works nicely. My preference for ginger is root whose flesh is more yellow and is more tender. These make for more fragrant tea.
  • Boil for 3-4 hours. The longer the water boils, the stronger the tea will be.
  • Add sugar or honey to taste and enjoy! This is good hot or iced. you can also add 1 tbsp heavy cream to make it luxurious.
