Layered Cucumber Salad

Slice tomatoes and cucumbers into about 5mm rounds. Layer the tomatoes, cucumber and onion in a medium bowl. Whisk the oil, vinegar, oregano, seasonings and sugar together. Drizzle dressing over cucumber salad. Refrigerate for an hour or a little longer before serving.
Introduction
I eat salads a lot with our main meals, so they're usually very easy. This is one favourite for when my mum gives me a ton of apple cucumbers. It would work with regular cucumbers though:)

- 2 large roma tomatoes
- 1 apple cucumber
- 1 small red onion (cut into rings)
- ¼ cup olive oil
- 1 tablespoon red wine vinegar
- 2 teaspoons fresh oregano
- ½ teaspoon superfine sugar
- seasoning (to taste)
