Set oven to 100 degrees C or less. Clean and dry any type of tomatoes, though I favour Roma, and the cherry ones work well too. Remove core, and cut into pieces, remembering that the drying process will shrink them somewhat. If using cherry tomatoes, just halve through the core. Sprinkle with salt and pepper and any other options you're choosing to use. Put tomatoes on a baking paper lined baking tray, skin side down. Dry slowly. Expect them to take at least three hours, When done remove from oven. Leave to cool slightly before storing in clean jars filled with olive oil - store in fridge. Keeps for months:)

Hello. This evening for a dinner party I've done this with some small baby plum tomatoes. I added a little thyme and basil, salt and pepper to them and cooked them on 80 degrees C for about 90 minutes. They were a fantastic concentrated flavour. I did them as an accompaniment to fillets of John Dory fried in butter with buttered leeks and boiled potatoes and a beurre blanc sauce. They cut through the luscious buttery taste of the rest of the meal just wonderfully and proved a good visual contrast. For those who don't really like chewing though, when the baby plum tomatoes are semi-dried in this way it does seem to make the skins more noticeable. In the context of a fairly soft meal otherwise, I thought the chewy texture worked really well, but I can imagine that my elderly father, had he been there, would have been spitting the skins out. Wonderful idea though, I think. Many thanks.
