  • 800 grams chicken thigh fillets
  • 1 tablespoon mixed spice
  • 2 teaspoons garam masala
  • 1 teaspoon Maldon sea salt flakes (level, or a teaspoon of table salt, if that)
  • 1 lemon (juice of)
  • lemons (wedges, to garnish)
  • 28 ounces chicken thigh fillets
  • 1 tablespoon pumpkin pie spice
  • 2 teaspoons garam masala
  • 1 teaspoon kosher salt (level, or a teaspoon of table salt, if that)
  • 1 lemon (juice of)

Method

I have, at times, forgotten the lemon juice in the initial rub, and then just squeezed it on at the end of cooking. I am not sure this isn't even a better option!
