- 800 grams chicken thigh fillets
- 1 tablespoon mixed spice
- 2 teaspoons garam masala
- 1 teaspoon Maldon sea salt flakes (level, or a teaspoon of table salt, if that)
- 1 lemon (juice of)

- Toss chicken in spices, salt and lemon juice.
- Cook chicken in a heated oiled frying pan over a medium heat for 10 minutes on both sides or until cooked through.

Additional Information
I have, at times, forgotten the lemon juice in the initial rub, and then just squeezed it on at the end of cooking. I am not sure this isn't even a better option!
