Boil the potatoes in salted water, peel and mash while still hot. Arrange them in a saucepan. Add the butter, a pinch of nutmeg and a pinch of salt. Stir with a wooden spoon and add a little at a time until the hot milk to create a soft cream. Stir in cheese.
