Metric Cups
  • 2 chicken breasts (boneless, diced)
  • 1 small onion (chopped)
  • 1 cooking apple (peeled and diced)
  • ¼ litre dry cider
  • 1 tablespoon flour (heaped)
  • 2 teaspoons curry powder (heaped)
  • cream (or yoghurt)

  • ⅖ pint dry hard cider
  • 1 tablespoon flour (heaped)
  • 2 teaspoons curry powder (heaped)
  • cream (or yoghurt)

Method

  • Brown chicken in oil.
  • Remove to a plate.
  • Add more oil and fry onion.
  • Add flour and curry powder and cook 1 min.
  • Gradually add cider, stirring.
  • Return chicken to pan and add cooking apple.
  • Cover and cook at 180 degrees C for 1 hour.
  • Stir in cream or yogurt to required consistency.
  • Return to oven for 5 mins.
  • Serve with rice and a green salad with avocado. (Avocado goes really well with this).
