  • water (boiling, pan of)
  • 750 grams minced beef (lean steak)
  • 6 rashers streaky bacon
  • 3 large eggs
  • 1 large red onion
  • ½ clove garlic
  • 1 salt
  • 1 pepper
  • 1 sprig fresh parsley (chopped)

Method

  • Place the minced beef in a bowl and mash it all up with your hands. Whisk the eggs and add to the mince.
  • Chop up the streaky streaky bacon finely and add to the mixture. Chop up the onion, garlic and parsley finely, then add salt and pepper to taste. Then mash it all together with your hands.
  • Cut a square of greaseproof paper 8 inches by 8 inches. Place the mince mixture at the edge of the greaseproof paper, mould into a log shape and roll up firmly so the mince parcel is tightly wrapped.
  • Tie the parcel firmly with string and add to the pan of boiling water. Boil on a high heat for 30 minutes, then reduce heat to a simmer for an additional 30 minutes.

    Leave the boiled beef to relax for 5 or 10 minutes before slicing and serving hot. If left to cool and placed in a refrigerator, this recipe makes an excellent sandwich filler, especially when served on brown bread with pickle or chutney.
