Potato Pudding

Introduction

This is really quick and easy if you use the grater attachment on the food processor. Great when you want a creamy carb-fest. Really good with meatloaf. (Work quickly with the grated potatoes so they don't brown before using them in the mix.)

Ingredients

Serves: 4

  • 2 eggs
  • 2 tablespoons plain flour
  • 1 tablespoon fresh parsley (chopped)
  • 1 clove garlic (minced)
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 onion
  • 6 medium potatoes
  • 1 tablespoon oil

  • Heat oven to 180c, Grease a 8in square tin,
  • In a bowl, beat eggs, stir in flour, parsley, garlic, salt and pepper, Stir in onion and potatoes,
  • Spread into baking tin and drizzle with oil.
  • Bake for 1hour, until browned.
  • Cut into squares and eat immediately.
