Potato Pudding

Heat oven to 180c, Grease a 8in square tin, In a bowl, beat eggs, stir in flour, parsley, garlic, salt and pepper, Stir in onion and potatoes, Spread into baking tin and drizzle with oil. Bake for 1hour, until browned. Cut into squares and eat immediately.
Introduction
This is really quick and easy if you use the grater attachment on the food processor. Great when you want a creamy carb-fest. Really good with meatloaf. (Work quickly with the grated potatoes so they don't brown before using them in the mix.)

- 2 eggs
- 2 tablespoons plain flour
- 1 tablespoon fresh parsley (chopped)
- 1 clove garlic (minced)
- ¾ teaspoon salt
- ¼ teaspoon black pepper
- 1 onion
- 6 medium potatoes
- 1 tablespoon oil
