Speedy Chicken and Corn Soup

Ingredients

Metric Cups
  • 1 large chicken breast (double, or 2 small breasts)
  • 2 egg whites
  • 40 millilitres cornflour
  • 80 millilitres water
  • 1000 millilitres chicken stock
  • 610 grams creamed sweetcorn
  • egg noodles (if desired)

  • 35 fluid ounces chicken broth
  • 21½ ounces creamed sweetcorn

Method

To make super speedy version using microwave:

  • Put chicken breast fillet on a plate, cover and cook on high for approx 1.5 minutes, depending upon your microwave. Alternatively steam or poach chicken as desired. You could use leftover roast chicken also. When cool, cut the chicken into thin strips.
  • Using a fork, mix together, chicken, egg white, cornflour and cold water in a bowl.
  • Combine chicken stock and sweetcorn in a large bowl and cook in microwave on high for approx 4 minutes (or until boiling) alternatively, heat on stove until boiling point is reached.
  • Stir well, then add the chicken mixture, combining well with a fork and cook on high for 2 minutes (or until everything is heated through) alternatively heat together in pot until boiling. Add noodles if using.
  • Serve piping hot sprinkled with chopped parsley or shallots.

    Cooked rice is a nice alternative to noodles. Crunchy chinese greens such as bok choy is also good when added at the last minute. Chopped chilli is great too.
