Summer Spinach Roll-Ups

Wash spinach carefully and remove stems. Blanch spinach in boiling water for 1 minute. Combine rice, cottage cheese, walnuts, golden raisins or raisins and onion. Place a tablespoon of rice mixture on each spinach leaf and roll up, being careful as you go, so that filling is completely enclosed. Place spinach rolls in a buttered casserole dish. Pour tomato passata or pasta sauce over and sprinkle with grated cheese. Bake in a moderate 180c oven for 15 to 20 minutes, until cheese is bubbling and sauce has reduced slightly.
Introduction
This is a great economical meal. Nice in summer with a crispy green salad alongside.

Serves: 4.
- ½ bunch spinach
- ½ cup cooked brown rice
- ½ cup cottage cheese (or ricotta)
- ½ cup chopped walnuts
- 2 tablespoons golden raisins (or raisins)
- 1 small chopped red onion
- ½ cup grated Cheddar cheese
- 1 cup tomato passata (or pasta sauce - thin with a little water if sauce is very thick)
