Summer Spinach Roll-Ups

Introduction

This is a great economical meal. Nice in summer with a crispy green salad alongside.

Ingredients

Serves: 4.

  • ½ bunch spinach
  • ½ cup cooked brown rice
  • ½ cup cottage cheese (or ricotta)
  • ½ cup chopped walnuts
  • 2 tablespoons golden raisins (or raisins)
  • 1 small chopped red onion
  • ½ cup grated Cheddar cheese
  • 1 cup tomato passata (or pasta sauce - thin with a little water if sauce is very thick)

  • Wash spinach carefully and remove stems.
  • Blanch spinach in boiling water for 1 minute. Combine rice, cottage cheese, walnuts, golden raisins or raisins and onion.
  • Place a tablespoon of rice mixture on each spinach leaf and roll up, being careful as you go, so that filling is completely enclosed.
  • Place spinach rolls in a buttered casserole dish. Pour tomato passata or pasta sauce over and sprinkle with grated cheese. Bake in a moderate 180c oven for 15 to 20 minutes, until cheese is bubbling and sauce has reduced slightly.
  • Additional Information

    A little chopped fresh mint or parsley is a nice addition.
